Indian spice blending workshop in gods own kitchen Princeton, NJ

Gitanjali has lived in various states of India and her understanding of Indian food is diverse and multi-faceted. Her heritage from Kerala, a region renowned for its unique culture and vibrant culinary traditions, deeply informs her cooking. Having lived in many different states across India, she brings a unique perspective to Indian cooking, weaving together the diverse flavors, techniques, and traditions that define the country’s culinary landscape.

Since arriving in the United States in 2000, Gitanjali has embraced her passion for food, conducting numerous workshops in Princeton where she introduces people to the authentic meals she grew up eating. With an undergraduate degree in Food Science and Nutrition, she is committed to organic, Ayurvedic, sustainable, and holistic approaches to food and nourishment. As a mother of three, she brings the same care and warmth to her classes that she does to her own kitchen. Gitanjali hopes to demystify the complex world of Indian spices and demonstrate the right cooking techniques to get the best flavors from fresh Indian ingredients.

Ayurvedic cooking classes for adults in Princeton, NJ

Kerala, often called “God’s Own Country,” is a coastal paradise located in the southernmost region of India. Known for its lush landscapes, serene backwaters, pristine beaches, and rich cultural heritage, Kerala is a place where nature and spirituality intertwine. The state’s diverse topography, from hill stations to coastal plains, has shaped its unique culinary traditions. Kerala’s food is a beautiful reflection of its environment, characterized by fresh, locally sourced ingredients, vibrant spices, and a deep connection to Ayurveda and holistic well-being. Dishes are often centered around rice, coconut, and a variety of seafood, with bold flavors from tamarind, curry leaves, mustard seeds, and fresh spices. Known for its vegetarian fare as well, Kerala’s cuisine includes rich, aromatic curries, dosa, sambar, and a wide array of chutneys and pickles. This vibrant food culture is deeply connected to the region’s history, with influences from ancient trade routes, diverse communities, and a spirit of hospitality. In Kerala, food is more than nourishment—it’s an experience, an offering to the gods, and a celebration of life. India, a land of unparalleled diversity, is as rich in its culture as it is in its cuisine. From the snow-capped peaks of the Himalayas to the sun-kissed beaches of the south, India’s vast landscapes offer an equally vast array of culinary traditions. Indian food is known for its bold flavors, vibrant spices, and the perfect balance of tastes—sweet, salty, sour, bitter, and umami—often all in one dish. Each region in India boasts its own distinct style of cooking, shaped by centuries of history, trade, and culture. From the creamy, spice-laden curries of the north to the coconut-based dishes of the south, India’s cuisine embraces a spectrum of ingredients and techniques. Spices such as cumin, coriander, turmeric, ginger, and cardamom form the backbone of Indian cooking, adding not only flavor but also healing properties, as food in India is often closely tied to Ayurveda, the science of life.

Indian cuisine also showcases a deep respect for plant-based diets, with a rich variety of vegetarian and vegan dishes. Food in India is a celebration—a ritual that brings people together, fosters community, and connects the present to ancient traditions.
